Google Gems for test interviews

AI has some strengths making problems for interview tests. Recently I've been using AI to prepare materials for students sitting for interview examinations, in particular the Tsūyaku Annai-shi Shiken (See Tourism Exam ) or the speaking and writing tests for TOEIC or Eiken. 

Would a Google Gem be useful in not just generating test questions but practicing these kinds of interview tests and giving feedback on student responses to the entire test?

I ran across this EduGems - DECA Role-Play Sim by Eric Curts. I tried the interview after downloading the Gem. Here is myDECA Role-Play Sim - My Interview Script of my reaction with the Gem. 

What is the next step? Has any work been done on other tests?
